Some recipes go viral for a reason, and this Crispy Parmesan Chicken Milanese is one of those dinners that delivers on every single bite. It’s golden, crunchy, savory, and served with the freshest kale Caesar salad to balance everything out.

Instead of using traditional chicken cutlets, I season ground chicken and spread it into one large, thin layer before coating both sides with flour, egg wash, and crispy panko. One side gets a generous shower of Parmesan before everything goes into the oven until deeply golden and crunchy.

The Yuzu Caesar Kale Salad is what brings the whole meal together. The dressing is creamy, citrusy, and full of savory flavor from white miso, while fresh kale and extra Parmesan add texture and freshness.

Crispy Parmesan Chicken Milanese

This Crispy Parmesan Chicken Milanese is baked until golden and crunchy, then served with a fresh kale salad tossed in a creamy yuzu miso Caesar dressing. Finished with Parmesan and crispy panko crumbs, it’s a satisfying dinner packed with contrasting textures and bold, savory flavor.

Ingredients
  

Chicken Milanese
  • 2 lbs ground chicken
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • Salt and pepper to taste
Crispy Coating
  • ¼ cup all-purpose flour
  • 2 eggs for egg wash
  • 2 cups panko breadcrumbs
  • Avocado oil spray
  • Parmesan cheese
  • Salt for finishing
Yuzu Caesar Kale Salad
  • 1 bunch kale stems removed and chopped
  • Extra Parmesan cheese for serving
  • Crispy panko crumbs from the Chicken Milanese for serving
Yuzu Caesar Dressing
  • 2 tbsp Dijon mustard
  • ¼ cup yuzu juice or lemon juice
  • ½ cup avocado mayonnaise
  • 3 tbsp white miso paste
  • Black pepper to taste

Method
 

  1. Preheat the oven to 450°F.
  2. In a bowl, mix the ground chicken with the garlic powder, onion powder, salt, and pepper. Set aside.
  3. Place the chicken mixture onto a sheet of parchment paper and spread it into a large rectangle about ¼-inch thick.
  4. Dust the chicken with flour and shake off any excess. Brush the egg wash over the top, then coat with panko breadcrumbs. Spray generously with avocado oil.
  5. Place another sheet of parchment paper on top and carefully flip the chicken.
  6. Repeat the coating process on the second side with flour, egg wash, and panko breadcrumbs.
  7. Generously coat the second side with Parmesan cheese. Finish with more avocado oil spray and a pinch of salt.
  8. Bake at 450°F for about 30 minutes, or until deeply golden and crispy.
  9. While the chicken cooks, whisk together the Dijon mustard, yuzu juice, avocado mayonnaise, white miso paste, and black pepper.
  10. Toss the dressing with the chopped kale and extra Parmesan cheese.
  11. Sprinkle crispy panko crumbs from the Chicken Milanese over the salad for extra crunch.
  12. Serve the Crispy Parmesan Chicken Milanese with the Yuzu Caesar Kale Salad.

Notes

  • For extra crunch, save the crispy parmesan panko pieces from the baking tray and sprinkle them over the salad before serving.
  • Lemon juice can be used as a substitute if yuzu juice is unavailable.
