These Hot Honey Lemon Salmon Bowls are fresh, flavorful, and packed with protein. Tender salmon bites are coated in a sweet and savory lemon honey glaze, baked until caramelized, then served over fluffy rice with refreshing mango cucumber salsa and creamy avocado for the perfect easy weeknight meal.

Ingredients
  

Lemon Honey Salmon
  • 1 ½ lbs salmon cut into bite-sized cubes
  • Zest of 1 lemon
  • 1 ½ tbsp dark soy sauce
  • 2 garlic cloves minced
  • 1 tbsp honey
Fresh Mango Cucumber Salsa
  • 1 English cucumber diced
  • 1 mango diced
  • ½ red onion finely chopped
  • 2 tbsp cilantro chopped
  • Juice of 1 lemon
  • Pinch of salt
  • Drizzle of olive oil
Bowl Assembly
  • Cooked white rice
  • Lemon honey glazed salmon
  • Mango cucumber salsa
  • Sliced avocado

Method
 

  1. Preheat oven to 450°F.
  2. In a bowl, combine salmon cubes, lemon zest, dark soy sauce, minced garlic, and honey.
  3. Toss until the salmon pieces are fully coated in the sweet and savory lemon glaze.
  4. Spread the salmon evenly onto a sheet pan.
  5. Bake for 10–15 minutes or until the salmon is caramelized on the outside and tender and flaky inside.
  6. While the salmon bakes, prepare the mango salsa by combining diced cucumber, mango, red onion, cilantro, lemon juice, salt, and olive oil in a bowl.
  7. Mix the salsa together and allow the flavors to combine.
  8. To assemble, add fluffy white rice to a bowl.
  9. Top with glazed salmon bites, fresh mango salsa, and sliced avocado.
  10. Serve immediately and enjoy.

Notes

  • For extra flavor, let the salmon marinate for 10–15 minutes before baking.
  • Swap white rice for brown rice, quinoa, or cauliflower rice for a different base option.
