Bake for 10–15 minutes or until the salmon is caramelized on the outside and tender and flaky inside.
While the salmon bakes, prepare the mango salsa by combining diced cucumber, mango, red onion, cilantro, lemon juice, salt, and olive oil in a bowl.
Mix the salsa together and allow the flavors to combine.
To assemble, add fluffy white rice to a bowl.
Top with glazed salmon bites, fresh mango salsa, and sliced avocado.
Serve immediately and enjoy.
