Some dinners look like they took hours to make, but secretly couldn’t be easier. That’s exactly why I love this Golden Smash & Skewer Party Pan. Crispy smashed potatoes, juicy Parmesan chicken skewers, and a bright green sauce all come together on one tray with barely any cleanup.
The potatoes are the real surprise here. Boiling them with a little baking soda creates the crispiest edges after roasting, while smoked paprika and garlic powder give every bite incredible flavor.
Then the chicken goes right on top. It’s loaded with fresh parsley, garlic, lemon, and Parmesan before roasting directly over the potatoes so every drop of flavor lands exactly where you want it.

Golden Smash & Skewer Party Pan
Ingredients
Method
- Preheat the oven to 400°F (200°C).
- Bring a large pot of salted water to a boil. Add the baking soda and baby potatoes. Cook until fork-tender.
- Drain the potatoes and return them to the pot. Toss with olive oil, garlic powder, and smoked paprika until evenly coated.
- Spread the potatoes onto a large sheet pan and gently smash each one with the bottom of a glass or potato masher. Set aside.
- Slice the chicken breasts very thinly. (For easier slicing, freeze the chicken for 30–45 minutes beforehand.)
- In a large bowl, combine the chicken with olive oil, parsley, garlic, lemon juice, and salt.
- Add the grated Parmesan and toss until evenly coated.
- Thread the chicken onto skewers.
- Lay the chicken skewers directly over the smashed potatoes.
- Roast for about 20 minutes, or until the chicken is cooked through and lightly golden and the potatoes are crispy.
- Alternatively, cook the entire tray on the BBQ for a smoky finish.
- Combine the yogurt, garlic, jalapeño, lemon juice, parsley, scallions, olive oil, maple syrup, salt, and pepper in a blender.
- Blend until smooth and creamy.
- Serve
- Plate the crispy potatoes, chicken skewers, and steamed broccoli.
- Generously drizzle the green sauce over everything before serving.
Notes
- Don’t skip the baking soda. It helps break down the potato exterior so they become extra crispy in the oven.
- Smash gently. Press just enough to flatten the potatoes while keeping them mostly intact.
- Perfect for the BBQ. You can skip the oven and roast the entire tray over indirect heat for a smoky flavor.
