Prepare the Potatoes
- Preheat the oven to 400°F (200°C).
- Bring a large pot of salted water to a boil. Add the baking soda and baby potatoes. Cook until fork-tender.
- Drain the potatoes and return them to the pot. Toss with olive oil, garlic powder, and smoked paprika until evenly coated.
- Spread the potatoes onto a large sheet pan and gently smash each one with the bottom of a glass or potato masher. Set aside.
Prepare the Chicken
- Slice the chicken breasts very thinly. (For easier slicing, freeze the chicken for 30–45 minutes beforehand.)
- In a large bowl, combine the chicken with olive oil, parsley, garlic, lemon juice, and salt.
- Add the grated Parmesan and toss until evenly coated.
- Thread the chicken onto skewers.
Assemble & Bake
- Lay the chicken skewers directly over the smashed potatoes.
- Roast for about 20 minutes, or until the chicken is cooked through and lightly golden and the potatoes are crispy.
- Alternatively, cook the entire tray on the BBQ for a smoky finish.
Make the Green Sauce
- Combine the yogurt, garlic, jalapeño, lemon juice, parsley, scallions, olive oil, maple syrup, salt, and pepper in a blender.
- Blend until smooth and creamy.
- Serve
- Plate the crispy potatoes, chicken skewers, and steamed broccoli.
- Generously drizzle the green sauce over everything before serving.
Notes
- Don't skip the baking soda. It helps break down the potato exterior so they become extra crispy in the oven.
- Smash gently. Press just enough to flatten the potatoes while keeping them mostly intact.
- Perfect for the BBQ. You can skip the oven and roast the entire tray over indirect heat for a smoky flavor.
