Heirloom Tomato Salad with Strawberry Lemon Vinaigrette

Ingredients
  

For the Salad
  • 2 heirloom tomatoes thinly sliced
  • Flaky salt to taste
  • Fresh microgreens for finishing
For the Strawberry Lemon Vinaigrette
  • ½ garlic clove finely minced
  • Zest of 1 lemon
  • 1 tablespoon strawberry vinegar
  • 2 tablespoons extra virgin olive oil
  • 3 anchovy fillets finely chopped
  • ½ cup scallions finely chopped

Method
 

  1. Arrange the heirloom tomato slices on a serving platter and season generously with flaky salt.
  2. In a small bowl, whisk together the garlic, lemon zest, strawberry vinegar, olive oil, chopped anchovies, and scallions.
  3. Spoon the vinaigrette evenly over the tomatoes.
  4. Finish with a handful of fresh microgreens and serve immediately.

Notes

  • Use the best tomatoes you can find. Since the tomatoes are the star, ripe, juicy heirlooms will make the biggest difference.
  • Salt the tomatoes just before dressing. This brings out their natural sweetness and helps create even more flavorful juices on the platter.
  • Strawberry vinegar is the special touch. It adds subtle fruitiness without making the salad overly sweet.
