Restaurant-Style Beef Gyudon at Home

This Beef Gyudon is a cozy Japanese-inspired rice bowl made with tender filet mignon, sweet onions, baby bella mushrooms, ginger, and a rich savory broth. Serve it over hot steamed rice with a poached egg and scallions for the ultimate comfort meal.

Ingredients
  

For the Broth
  • cups sake
  • 1 piece kombu optional
  • 1- inch piece ginger julienned
  • 3 cups water
  • cups soy sauce
  • cups mirin
  • 4 onions thinly sliced
  • 2 cups baby bella mushrooms sliced
  • 1 tbsp sugar
  • lbs filet mignon thinly sliced
  • Steamed rice for serving
Optional Toppings
  • Poached egg
  • Scallions

Method
 

  1. Add the sake, kombu, ginger, water, soy sauce, and mirin to a large pot. Bring to a gentle simmer.
  2. Add the onions and mushrooms. Cook until the onions become soft and slightly caramelized.
  3. Stir in the sugar and mix well.
  4. Add the thinly sliced filet mignon and simmer for 3–5 minutes, just until the beef is tender.
  5. Remove the kombu, if using.
  6. Serve over hot steamed rice.
  7. Top with a poached egg and fresh scallions, if desired.
