Method
- Add the sake, kombu, ginger, water, soy sauce, and mirin to a large pot. Bring to a gentle simmer.
- Add the onions and mushrooms. Cook until the onions become soft and slightly caramelized.
- Stir in the sugar and mix well.
- Add the thinly sliced filet mignon and simmer for 3–5 minutes, just until the beef is tender.
- Remove the kombu, if using.
- Serve over hot steamed rice.
- Top with a poached egg and fresh scallions, if desired.
