There are certain summer recipes that don’t need much to be incredible, and this Heirloom Tomato Salad is exactly that. When tomatoes are at their best, I want to do as little as possible to them and let all that juicy, sweet flavor shine.
The vinaigrette is what makes this one feel special. Strawberry vinegar brings just a hint of sweetness, lemon zest keeps everything bright, and finely chopped anchovies add that salty, savory depth that makes you keep going back for another bite.
I love arranging the tomatoes on a big platter, spooning the vinaigrette over the top, and finishing everything with scallions, flaky salt, and fresh microgreens. It looks beautiful without trying too hard.
Serve this as a light lunch, an easy appetizer, or alongside anything coming off the grill. It’s fresh, colorful, and exactly what I want on the table all summer.

Heirloom Tomato Salad with Strawberry Lemon Vinaigrette

Method
- Arrange the heirloom tomato slices on a serving platter and season generously with flaky salt.
- In a small bowl, whisk together the garlic, lemon zest, strawberry vinegar, olive oil, chopped anchovies, and scallions.
- Spoon the vinaigrette evenly over the tomatoes.
- Finish with a handful of fresh microgreens and serve immediately.
Notes
- Use the best tomatoes you can find. Since the tomatoes are the star, ripe, juicy heirlooms will make the biggest difference.
- Salt the tomatoes just before dressing. This brings out their natural sweetness and helps create even more flavorful juices on the platter.
- Strawberry vinegar is the special touch. It adds subtle fruitiness without making the salad overly sweet.
