I almost forgot how good these Smash Burger Tortilla Tacos are, and after making them again, I can confidently say they deserve a permanent place in the dinner rotation. They’re crispy, cheesy, juicy, and covered in the kind of burger sauce you’ll want to put on everything.
The method is so simple. Instead of shaping individual burger patties, you press a thin layer of seasoned ground beef directly onto each tortilla and cook it meat-side down in a hot skillet. The beef develops those crispy smash-burger edges while the tortilla catches all the flavor underneath.
Once the tacos are topped with cheddar and baked until melted, the fun part begins. Add cold shredded lettuce, juicy tomatoes, plenty of burger sauce, and pickles if you’re on the correct side of the pickle debate.
These are perfect for Taco Tuesday, casual family dinners, or nights when you want something fun without spending hours in the kitchen. They have everything you love about a cheeseburger, but the crispy tortilla somehow makes every bite even better.

Ingredients
Method
- Add the avocado mayonnaise, tomato paste, garlic powder, smoked paprika, pickle relish, Worcestershire sauce, and hot sauce to a small bowl.
- Mix until smooth and creamy. Set aside.
- Add the ground beef, garlic powder, onion powder, salt, and black pepper to a bowl.
- Mix until just combined. Avoid overmixing so the beef remains tender.
- Preheat the oven to 450°F (230°C).
- Spread a thin, even layer of the seasoned beef over one side of each flour tortilla, pressing it close to the edges.
- Heat a skillet over medium-high heat.
- Place each tortilla into the hot skillet with the beef side facing down.
- Cook for 2–3 minutes, or until the beef is browned and develops crispy edges.
- Transfer the taco to a baking sheet and repeat with the remaining tortillas.
- Sprinkle the shredded cheddar over the cooked beef.
- Bake at 450°F until the cheese is melted.
- Finish each taco with shredded romaine, diced tomato, burger sauce, and pickles, if using.
- Fold and serve immediately.
Notes
- Spread the beef thinly. A thin, even layer helps the meat cook quickly and creates the crispy smash-burger edges.
- Press the beef to the tortilla. Make sure it reaches close to the edges so every bite gets beef and the tortilla stays attached while cooking.
- Use a hot skillet. The pan should be properly heated before adding the tacos so the beef browns instead of steaming.
