I know this is a bold statement, but this Artichoke Herb Parmesan Dip might actually give the Italian Goddess Dip some serious competition. It has all the things I want in an appetizer—something briny, something bright, plenty of fresh herbs, a little heat, and enough Parmesan to make every bite better than the last.
The base starts with really good olive oil, garlic, lemon zest, and chili flakes. Then come fresh mint, dill, parsley, and chopped artichoke hearts, all layered together in a shallow bowl so every scoop gets a little bit of everything.
There’s no blending, baking, or complicated prep involved. You simply layer the ingredients, season everything well, and finish with a generous shower of freshly grated Parmesan.
Serve it with warm toasted sourdough and put it right in the center of the table. It’s perfect for summer gatherings, happy hour at home, or those last-minute moments when you need something impressive without turning on the oven.

Ingredients
Method
- Pour the extra virgin olive oil into a shallow serving bowl.
- Add the minced garlic.
- Sprinkle in the lemon zest and chili flakes.
- Layer in the chopped mint, dill, and parsley.
- Add the chopped artichoke hearts.
- Season with salt and black pepper to taste.
- Finish with plenty of freshly grated Parmesan.
- Serve immediately with warm toasted sourdough for scooping.
Notes
- Drain the artichokes well. Excess liquid can dilute the olive oil and make the finished dip watery.
- Grate the Parmesan just before serving. Freshly grated cheese has a softer texture and better flavor than pre-shredded Parmesan.
- Make a double batch for entertaining. The dip is easy to assemble and works especially well as a centerpiece for a casual appetizer spread.
