Crispy Teriyaki Chicken & Rice Kale Bowl

Fresh, crunchy, creamy, and packed with over 40g of protein per serving, this Crispy Teriyaki Chicken & Rice Kale Bowl combines juicy marinated chicken, crispy teriyaki rice, avocado, cucumber, lemony kale, and a creamy herb dressing for the ultimate healthy lunch or weeknight dinner.

Ingredients
  

Kale Base
  • 1 bunch kale finely chopped
  • Drizzle of olive oil
  • Juice of ½ lemon
  • Pinch of salt
Chicken
  • 2 chicken breasts cut into pieces
  • 2 tablespoons caramelized onion powder
  • 1 teaspoon celery powder
  • Salt to taste
  • Zest of 2 limes
  • Drizzle of olive oil
  • 2 red onions chopped
Crispy Rice
  • 2 cups cooked rice
  • 3 tablespoons teriyaki sauce
Vegetables
  • 1 avocado sliced
  • 1 English cucumber chopped
Creamy Herb Dressing
  • 1 cup cottage cheese
  • ½ cup plain yogurt
  • 1 bunch cilantro
  • ½ cup scallions
  • 1 garlic clove
  • Drizzle of olive oil
  • Juice of 1 lemon
  • Salt and pepper

Method
 

  1. Preheat the oven to 400°F (200°C).
  2. Add the chopped kale to a large bowl. Massage with a drizzle of olive oil, the juice of ½ lemon, and a pinch of salt until softened. Set aside.
  3. In a mixing bowl, combine the chicken, caramelized onion powder, celery powder, salt, lime zest, olive oil, and chopped red onions. Toss until evenly coated.
  4. In a separate bowl, toss the cooked rice with the teriyaki sauce until well coated.
  5. Spread the chicken on one side of a sheet pan and the seasoned rice on the other side.
  6. Bake until the chicken is fully cooked and golden and the rice is crispy.
  7. While everything bakes, prepare the dressing by blending the cottage cheese, yogurt, cilantro, scallions, garlic, olive oil, lemon juice, salt, and pepper until smooth and creamy.
  8. Assemble the bowls by layering the massaged kale, crispy rice, chicken, chopped cucumber, sliced avocado, and a generous drizzle of the creamy herb dressing.
  9. Serve immediately and enjoy.
