Japanese Braised Short Ribs

Some recipes make it hard to believe they came from your own kitchen, and this is one of them.

The short ribs slowly braise in a mixture of soy sauce, mirin, ginger, and garlic until the meat becomes tender enough to pull apart with a fork. The sauce reduces into something rich, savory, and deeply satisfying.

What I love most about this recipe is that it feels incredibly elevated while requiring very little active work. Once everything is in the pot, time does most of the cooking for you.

Serve it over mashed potatoes or rice, spoon the sauce generously over the top, and watch it disappear.

Japanese Braised Short Ribs

Fork-tender short ribs slowly braised in soy sauce, mirin, ginger, and garlic until rich, glossy, and deeply savory. Serve over mashed potatoes or steamed rice for an unforgettable comfort meal.

Ingredients
  

  • 8 boneless beef short ribs
  • 1 cup soy sauce
  • 1 cup mirin
  • ¼ cup rice vinegar
  • 3 cups water
  • 2- inch piece fresh ginger sliced
  • 6 garlic cloves sliced
  • Salt and pepper to taste
For Serving (Optional)
  • Creamy mashed potatoes
  • Steamed white rice
  • Scallions
  • Sesame seeds

Method
 

  1. Season and sear the short ribs on all sides until deep golden. Drain off excess rendered fat.
  2. Return to the pot. Add soy sauce, mirin, rice vinegar, water, sliced ginger, and garlic.
  3. Cover and braise on low heat for 3–4 hours until fork-tender.
  4. If the sauce is too thin, uncover and simmer to reduce and concentrate.
  5. Serve with mash or rice. Done.
