Japanese Beef Enoki Rolls

Ever since arriving in Japan, I’ve found myself completely inspired by the kind of food that’s simple, comforting, and incredibly satisfying. Some of my favorite meals here haven’t been elaborate tasting menus—they’ve been cozy little izakayas serving dishes packed with bold flavor using just a handful of ingredients.

These beef enoki rolls are exactly that kind of meal. Thin slices of beef wrapped around delicate enoki mushrooms, gently simmered in a glossy soy, mirin, and sake sauce until everything becomes tender and deeply savory. The onions slowly cook underneath, soaking up every bit of that incredible sauce, while the mushrooms stay juicy and flavorful inside the beef.

It’s one of those recipes that feels restaurant-worthy but couldn’t be easier to make at home. Everything cooks together in one pan, making it perfect for busy weeknights while still feeling a little special.

Serve it over steaming Japanese rice, sprinkle on plenty of scallions and toasted sesame seeds, and don’t forget to spoon every last drop of sauce over the rice. Trust me—that’s the best part.

Japanese Beef Enoki Rolls (Easy 20-Minute Dinner Recipe)

Thinly sliced beef wrapped around tender enoki mushrooms, simmered in a savory soy, mirin, sake, and sesame glaze. This easy Japanese-inspired dinner comes together in just 20 minutes and is delicious served over steamed rice with scallions and toasted sesame seeds.

Ingredients
  

Beef Rolls
  • 1 lb thinly sliced hot pot beef
  • 2 packs enoki mushrooms
  • 1 onion sliced
Japanese Soy Glaze
  • ½ cup sake
  • ½ cup mirin
  • ½ cup soy sauce
  • cups water
  • ½ packet dashi powder optional
  • 2 tsp toasted sesame oil
For Serving
  • Sliced scallions
  • Toasted sesame seeds
  • Steamed Japanese rice

Method
 

  1. Divide the enoki mushrooms into small bundles.
  2. Place one bundle at one end of each slice of beef and roll tightly.
  3. Layer sliced onion in a pan, then place the beef enoki rolls on top.
  4. In a bowl, mix together the sake, mirin, soy sauce, water, dashi powder (if using), and toasted sesame oil.
  5. Pour the sauce evenly over the beef rolls.
  6. Cover and simmer over medium heat for 15–20 minutes, until the sauce is rich, glossy, and irresistible.
  7. Garnish with sliced scallions and toasted sesame seeds.
  8. Serve immediately over steamed Japanese rice.
