Japanese Beef Enoki Rolls (Easy 20-Minute Dinner Recipe)

Thinly sliced beef wrapped around tender enoki mushrooms, simmered in a savory soy, mirin, sake, and sesame glaze. This easy Japanese-inspired dinner comes together in just 20 minutes and is delicious served over steamed rice with scallions and toasted sesame seeds.

Ingredients
  

Beef Rolls
  • 1 lb thinly sliced hot pot beef
  • 2 packs enoki mushrooms
  • 1 onion sliced
Japanese Soy Glaze
  • ½ cup sake
  • ½ cup mirin
  • ½ cup soy sauce
  • cups water
  • ½ packet dashi powder optional
  • 2 tsp toasted sesame oil
For Serving
  • Sliced scallions
  • Toasted sesame seeds
  • Steamed Japanese rice

Method
 

  1. Divide the enoki mushrooms into small bundles.
  2. Place one bundle at one end of each slice of beef and roll tightly.
  3. Layer sliced onion in a pan, then place the beef enoki rolls on top.
  4. In a bowl, mix together the sake, mirin, soy sauce, water, dashi powder (if using), and toasted sesame oil.
  5. Pour the sauce evenly over the beef rolls.
  6. Cover and simmer over medium heat for 15–20 minutes, until the sauce is rich, glossy, and irresistible.
  7. Garnish with sliced scallions and toasted sesame seeds.
  8. Serve immediately over steamed Japanese rice.
