Mix all of the chicken filling ingredients in a bowl until fully combined.
Heat a lightly oiled skillet over medium heat. Add small portions of the filling directly to the pan, leaving space between each portion.
Place a wonton wrapper over each portion and gently press so it hugs the filling. No folding needed.
Pour ¼ cup water into the skillet, cover, and let the dumplings cook for 5–7 minutes over low-medium heat.
Meanwhile, combine the soy sauce, rice vinegar, maple syrup, sweet and sour chili sauce, and chopped scallions in a small bowl to make the dipping sauce.
Flip the dumplings onto a plate so the crispy side is facing up.
Serve immediately with the dipping sauce and sprinkle with sesame seeds, if desired.
